Fondant is a rolled icing that’s used to cover cakes and cupcakes. Since it’s an icing, fondant never hardens like gum paste. Fondant contains a key ingredient called glycerine, it’s what makes it behave differently than gum paste. Glycerine is what keeps fondant soft and pliable, making it ideal for covering a cake.
In America, Australia and some other countries it is referred to as fondant. In the UK this term is being used more and more. However, fondant icing in the UK is similar to royal icing but doesn’t set as hard. Rolled icing, sugarpaste, fondant are the same thing.

Fondant is actually more expensive than other icings, which is why most bakers recommend buttercream instead for budget-savvy brides. Buttercream has the same smooth consistency as fondant, but frankly, it’s richer and more palatable.
If you want to make sugar flowers you want to use gumpaste. You can roll the gum paste thinner, so your flowers have a more realistic look to them, rather than fondant. If you are covering a cake, you want to use Fondant. If you want to make sugar flowers, 3-D accents and even bows, you want to use gumpaste.
I use Renshaws Regal ice for regular cakes and Satin ice for very special cakes. Renshaws is soft and easy to roll out, it will tear if too thin, but on the whole I find it’s good to work with. Satin ice is my favourite, it can be rolled out very thin, doesn’t tear very easily and has a yummy vanilla taste.

Fondant will harden when it is exposed to air, but how quickly it hardens will depend on the humidity and the air temperature. In humid environments, it takes longer to dry. When you have made decorations for a cake, you need them to harden so that they will hold their form.

You color it with food colors. It’s best to use gel colors: apply the color with toothpick into the fondant. Then you knead it like dough to spread the color evenly. If you use liquid colors, add them to the fondant before you add the powdered sugar.
